Chickpea & Plantain Salad
Serves 2 people
500g canned chickpeas
1 ripe avocado
200g baby tomatoes
2 cloves of garlic
1 level tsp black pepper
1tsp of onion granules
1tbsp olive oil
3 tbsp of Fula Flavour Spicy Lemon & Herb
1 fresh lemon
2 fresh tomatoes,
½ red or white onion
1 clove of garlic
1 tsp of olive oil
1 tsp of lemon juice
Pinch of salt
1 tsp of Fula Flavour Spicy Lemon & Herb
- Finely chop the garlic and onion. Shallow fry in olive oil for 2 mins
- Add the chickpeas, black pepper and Fula Flavour Lemon & Herb. Cook for a further 5 mins.
- Add the chopped peppers and cook for another 5 mins
Remove skin, cut into small pieces and shallow fry (takes approx. 10 mins).
Finely chop the tomatoes and onion. Mix in the garlic, lemon juice, olive oil and Fula Flavour Lemon & Herb.
Remove the skin of the avocado and cut into small pieces.
